Bourbon Steak by Michael Mina Replacing Shula's at Walt Disney World Dolphin This Summer

A new dining experience is on the way to Walt Disney World Swan and Dolphin. The resort has announced that Bourbon Steak by Michael Mina will open its doors this summer, replacing Shula’s Steakhouse at the Dolphin Hotel.

This marks the tenth location for the acclaimed Bourbon Steak brand and the third in Florida. It also brings another high-profile name to the Swan and Dolphin’s extensive lineup of restaurants and lounges—now totaling 23.

Chef Michael Mina, a James Beard Award winner and founder of The Mina Group, is known for elevating the classic American steakhouse. The menu at the new Bourbon Steak location will focus on high-end cuts of beef and seafood prepared using modern techniques, with global influences and a strong emphasis on product, technique, and presentation.

Chef Mina said the partnership makes sense because of the Swan and Dolphin’s strong culinary program and commitment to quality. “Each Bourbon Steak is uniquely designed to represent the environment it is in,” he said, adding that he looks forward to working with the local team on the Orlando concept.

Shula’s Steakhouse will continue operating through June 14, 2025. The new restaurant is expected to debut in mid-summer.

This expansion continues The Mina Group’s growth in Florida, which includes locations in Miami and Delray Beach.

    Bourbon Steak is a very good restaurant and we've frequented the Aventura location multiple times.

    I will definitely miss Shula's. It has a fun backstory, great service and solid food. I do think this is an upgrade, and Mina will give Marriott greater pull with conventions. I've been to a few of his places in Vegas, and I know Bourbon generally has a pretty good reputation at the other locations. Does anyone know... is additional dining in-scope for the convention expansion? Or, do they feel the current offerings (which are arguably some of the best on property) are sufficient? The announcement didn't say anything beyond the convention expansion itself.
