First Look: Wailulu Bar and Grill's Polynesian-Inspired Menu in The New Island Tower at Disney's Polynesian Resort

The Island Tower at Disney's Polynesian Villas & Bungalows will soon welcome Wailulu Bar & Grill, a casual poolside spot opening December 17, 2024.

This walk-up bar and grill will serve up Polynesian-inspired dishes, desserts, and beverages while offering views of the Seven Seas Lagoon and Magic Kingdom fireworks.

Here is a look at the full menu and some of the dishes on offer.

Wailulu Bar & Grill Menu

Food Items

  • Sweet Potato Hummus, crispy chickpeas, espelette pepper dust, and breadfruit tostones
  • Ahi Tuna Crisps: Marinated ahi tuna, crispy fried wontons, avocado crema, sriracha-aioli, and soy glaze
  • Grilled Shrimp, smoked paprika, black garlic emulsion, garlic-lemon butter, and crispy garlic
  • Spiced Ham Musubi with glazed spam seasoned with traditional furikake and served with crispy rice pearls
  • Crispy Chicken Wings: Adobo-marinated, soy glaze, and tomato-fresno pepper relish
  • Wayfinder Burger: Two pressed patties, American cheese, onion jam, volcano sauce, and sweet bun served with mac salad or sweet potato fries
  • Beef Short Rib Loco Moco: Shiitake mushroom gravy, crispy rice cake, and fried egg
  • Grilled Fish of the Day: Green curry broth, jasmine rice, chickpeas, and sweet potato
  • Poke Bowl: Sushi-style rice, pickled cucumbers, vegetables, spicy poke sauce, and macadamia nuts with choice of ahi tuna, grilled teriyaki chicken, or grilled tofu
  • Chow Mein Salad: Charred cabbage, shishito peppers, hearts of palm, pickled sweet potato, and sunflower butter dressing with choice of sauteed shrimp, grilled teriyaki chicken, or grilled tofu
  • Sticky Pork Ribs, salt-cured green cabbage, jicama slaw, and pineapple chips

Kids Meals

  • White Cheddar Macaroni & Cheese
  • Grilled Teriyaki Chicken

Desserts

  • DOLE Whip Sundae with hibiscus meringue and passion fruit crispies
  • Chocolate Cake with salted caramel ganache and Chantilly cream infused with the essence of Kona coffee

Breakfast

  • Pineapple-Coconut Bread (Available for breakfast only)

Beverages

  • Hibiscus Tea: Hibiscus flower-infused tea with lime and agave nectar (Non-alcoholic beverage)
  • Kula Strawberry Sake: Wildflowers Junmai Sake, Campari Liqueur, Rockey’s Botanical Liqueur, and wild strawberry
  • Passionfruit and Pineapple Daiquiri: Ten to One Caribbean White Rum, Minute Maid Passion Fruit Orange Guava Juice, pineapple, and lime
  • Pandan Gin Gin Mule: Pandan-infused Fords Gin, lime juice, and ginger beer

    There will be a few new dining venues as part of Lakeside Lodge.

    This begs to question how the new Lakeside Lodge will effect Wilderness Lodge and Fort Wilderness etc.. it seems Disney is only implementing a new quick service when the new DVC resort is a stand alone new DVC resort. None of additions to existing resorts has received a new additional quick service offering. Does it not matter for Grand Floridian Villas and Bay Lake Tower? so ironically Polynesian doesn't need one either and maybe so with Lakeside Lodge if that thing is just an addition of..

    This was after the new building opened...in April....Looked much busier than I remember it... We had diner at the new place in the tower...they were also very crowded...there was an hour plus wait for the outdoor seating... We all agreed it looked nice but didn't feel like the Polynesian... Not a total pan...there are some nice elements here and there, but as an addition to a very beloved and well known resort, it missed the mark.

    Was this after the new building opened? We’ve stayed many times and though Cooks is almost always busy the waits have typically felt reasonable to us. It would be disappointing if the new addition has changed that. Like the other poster said, Poly seems to attract a lot of outside guests so Disney should account for that

    If Polynesian had one it would end up falling in the same standards as California Grill. I'm not for sure it's for a beginning grand opening period but this tower you only access the elevators if you happen to have a room. California Grill you need to ask, check in and be escorted with someone or permission to go on the elevator even say if you went there for the bar. Riviera you do not and runs just like Gran Destino Tower, both have amazing views but the views themselves aren't the signature view that certain Dreamer's would say is a dream about California Grill or The Polynesian would bring. I'm not even sure if anyone can go visit one of the boxed terraces at the tower just by asking.

    Pre fix sucks only if it's the only option. You save more than paying a drink, entree, dessert, soup, salad or appetizer if you did it all separate.

    I am not sure about that....California Grill is an awfully busy venue...as is the restaurant they built at the Riviera and the lounge on top of BLT... People love to have a wonderful view and are happy to pay for it. When we stay at BLT we always try to end each evening at the Top Of The World for a few cocktails... We have done the same at the Riviera...

    I imagine Disney passed on the idea of a rooftop restaurant at PIT because they had an existing example in the California Grill and found it undesirable. California Grill is a hassle for management and employees, there is always someone there trying to watch fireworks for free or minimum cost and begging "aww cmon". Prix fix is obviously meant to help address that, and profitability, but I'd doubt it prints much money. Moneybags Bob will pass on another restaurant like that. He'd rather put ostentatious DVC on top, that's how they print money, and again they know just how much they'll rake in because they have an example in the bungalows. I actually think a rooftop restaurant would work better if they just let anyone watch from up there for free whether they paid for anything or not. By fighting the horde they keep the deck protected for the few that make it causing it to be sought after. If it were always crowded it would be less desirable, no longer a "best kept secret" heavily publicized by vloggers and tour guides which is ironically not a secret. Fire code probably prevents allowing crowds on that deck though.
